What does pizza mean to us?
By the 2000s, pizza unfortunately became labeled as a symbol of unhealthy eating:
- “Empty calories” from fast-risen dough, greasy low-quality cheese, and overloaded ultra-processed toppings.
- All topped with that “I’m about to burst” feeling, where even a bottle of cola didn’t help.
For us, the original, traditional Neapolitan pizza represents the complete opposite:
- Long-fermented dough, selected fresh, high-quality toppings, and fast baking (which requires great expertise), with the culinary spirit that defines Italian cuisine.
